Jamaica Hilton Head Banana Bread


Ingredients

1 lb. ripe bananas (4-5)
2 cups white sugar
1 1/4 cups oil
4 cups flour
4 eggs
Dash of (1/2 tsp.) lemon juice, vanilla & almond extracts
1/4 tsp. salt
4 tsp. baking soda dissolved in 1 3/8 c. milk
Nuts (optional)

Preparation

Mix bananas, oil and sugar. Add flour and eggs; continue beating. Add remaining ingredients; beat well. Grease loaf pans and fill 2/3 full. Bake at 300 degrees for 1 hour or until done in center. Makes 3 loaves.
