Jamaica Rice and Peas

Ingredients
1 cup red peas
1 med. onion, chopped
1/2 sweet pepper
1 or 2 tomatoes, chopped
2 cups rice, washed & clean
1 coconut, grated
1 cup coconut milk
1/2 cup beef or bacon
2 tbsp. fat
Preparation
Boil the peas until tender in 3 cups boiling water. Heat the fat in a frying pan and brown the chopped onion, sweet pepper, tomatoes and chopped beef or bacon. Add the rice, coconut milk and the cooked meat, seasonings to the peas. Cook until the rice is done, stirring constantly
