Jamaican Curry Chicken

Ingredients

2 tbsp. vegetable oil
2 garlic cloves, finely chopped
1 tsp. curry powder
1/2 tsp. chicken season
1/2 tsp. allspice season
3/4 cup chicken breast cubed,
1/4 cup onion, chopped
1/2 cup potato diced
1/2 cup water
1/4 cup grated ginger
1/4 cup coconut milk

Preparation

Add chicken cubes, chicken and allspice seasons, onions and grated ginger together in a bowl, mix well. Heat oil in a saucepan then add garlic and curry powder, stir until the curry starts to change color. Add the chicken and stir well to coat the meat in the curry mixture, try not to burn the chicken. Add water and potato to chicken and cook over medium heat until the potato is just cooked. Stir in coconut milk, and simmer gently until the sauce thickens.
