Jamaican Rum Cake
Ingredients
2 tsp vanilla
2 tsp lime juice
3/4 cup Appleton White Rum
1 tbsp browning
1 1/4 lb sugar
1 1/2 lb butter
6 eggs
4 cups mixed fruits
3/4 cup bread crumbs
3 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 cup chopped nuts
Preparation
Line a baking tin with brown paper or greaseproof paper and grease with shortening. Mix butter, sugar, browning, vanilla and lime juice. Add one egg at a time with mixed fruits, flour, bread crumbs, baking powder and salt. Add the white rum. Pour into baking tins. Bake at 375 Degrees for 3 hours or until cake is done.
