Jamaica-Westmoreland White Cake


Ingredients

1 lb. soaked mixed fruits
9 eggs
1/2 butter
1 lb sugar
1 lb flour
1 tsp almond flavoring
2 tsp. Vanilla
1 cup currant
1/2 cup Red Label wine
1/2 cup Appleton white rum
1/2 cup molasses
2 tsp cinnamon powder
2 tsp lime juice
2 tsp nutmeg powder
1 tsp baking powder

Preparation

Preheat oven to 350ºF. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the remaining ingredients until batter is smooth. Grease and flour a 9×9 inch pan or line a muffin pan with paper liners. Pour or spoon batter into the prepared pan. Bake for 30 to 40 minutes or until done. Do not over-bake.
