Jamaican Fish Fillet in White Wine Sauce

Ingredients

2 lbs fish fillet
1⁄4 cup grace vinegar
1 cup water
1 tsp salt
1 tsp white pepper
2 cloves garlic, crushed and minced
1 large onion; cut in rings
1⁄2 cup white wine
1 cup white sauce

Preparation

Pre-heat oven to 180°C (350°F). Grease a 1 liter (1 quart) casserole dish. Clean fish fillet with a solution of Grace Vinegar and water. Blot dry with absorbent paper. Season fish fillet with salt, white pepper and minced garlic. Arrange seasoned fish fillet in the greased casserole dish and top with onion rings. Combine white wine with white sauce and pour liquid mixture over fish fillets; cover with aluminum foil. Place in pre-heated oven and allow to bake until done.

White Wine Sauce


1 tbsp Grace Hello Margarine
1 tbsp Flour
1/4 tsp Salt
1/4 tsp White Pepper
1 cup Milk

Preparations

In a saucepan melt Grace Hello Margarine; add flour and stir together until mixture thickens. Reduce flame. Add salt and pepper. Gradually add milk, whisking briskly to avoid lumping. Cook slowly until mixture thickens. Use as directed.
