Bean Burgers


Ingredients

2 cans broad beans
2 oz. oats
2 oz. breadcrumbs
2 cloves garlic, minced
1 large onion, chopped
2 tsp salt
2 tsp Caribbean traditions black pepper
2 tsp parsley flakes
1 tsp soy sauce
2 egg whites, beaten
1⁄4 cup vegetable oil
4 whole hamburger buns, sliced open
1⁄4 cup mayonnaise
4 large lettuce leaves
4 slices tomato
4 slices sweet pickle

Preparation

Drain and mash broad beans; add oats, breadcrumbs, minced garlic, chopped onion, salt, black pepper, parsley flakes and soy sauce. Combine well. Add beaten egg whites and combine. Divide the mixture into four equal parts. Shape into burger patties. Heat vegetable oil and fry burger patties on each side until golden brown. Repeat for other burgers. Spread mayonnaise on the inside of burger buns. Lay lettuce, tomatoes and sweet pickles on bottom half, add bean burger. Cover the burger with the other half of burger bun, secure with a toothpick.
