Calloloo Fritters

Ingredients
1/4 tsp salt
1/4 tsp baking powder
1 egg beaten
2 tomatoes chopped
1 stalk escallion finely chopped
2 1/4 cup flour
1 tbsp margarine
1 large chopped onion
2 cups callaloo chopped
Preparation
Sauté onions, tomatoes and scallion in margarine then add chopped callaloo and steam for 10 minutes. Sift flour with baking powder and salt. Add the egg to the callaloo and to the flour mixture. Mix until you have a medium batter and fry each tablespoon amount in at least 1/2 inch vegetable oil. Serve hot.
Saltfish Fritters Recipe
Saltfish Fritters is used in many homes across Jamaica for breakfast. It doesn’t take a lot of time to be prepared, which is convenient for working persons who have to rush in the mornings to make breakfast for the family.

Ingredients:
1 1⁄2 Cups counter flour
8 Ounces saltfish (soaked, deboned and flaked)
1 Medium onion, chopped
1 Stalk escallion, chopped
1 Medium tomato, diced
1 Cup water
1 Teaspoon scotch bonnet pepper, finely chopped

Corn Fritters

Ingredients
3 green onions, minced
1 clove garlic, pressed
1 to 2 tbsp. cilantro minced
1 1/4 cup flour
2 1/2 cup frozen corn kernels, thaw
and drain
3 eggs
1 tbsp. sugar
1 to 2 tsp. salt
1 1/2 tbsp. ground coriander
1 tsp. black pepper
1 1/2 tbsp. baking powder
